Live parsley
Live parsley is popular as a spice or condiment, however, it has nutritional values that can provide much more than flavour. This Eastern Mediterranean plant was prized by the Greeks and Romans; it is now found virtually everywhere in the world for culinary purposes.
For salad dressings, vinaigrettes, sauces, pasta and other dishes, parsley is perfect. Even in the famous tabbouleh salad, it replaces lettuce as the main leaf. An important fact for its use in cooking is that if it is added with all the food in the pan, it will lose flavour and smell. It is best to add it when cooking is about to finish.
Now, on the medicinal properties side, this plant is no slouch. It helps relieve rheumatic pains, heals wounds such as bites, is an antioxidant and has diuretic effects. It also protects the blood vessels… that’s why many healthy smoothies contain parsley – you’d be hard pressed to find a vegetable with so many benefits and nutritional richness!
